Breakfast on the Go

January 2, 2014 By Gabe Kapler 4 Comments

I celebrated the opening of the new year with a snowboarding adventure in Whitefish, Montana.

Because I flat out love food and hate wasting a meal, relying solely on airport food wasn’t going to cut it. Packing some nutrition for the hours prior to getting settled in the sleepy little mountain town was an absolute must.

In the darkness of my kitchen, blueberries, purple cabbage and some sprouted grain bread with organic peanut butter snuck its way into a small bag and I was set.

Blueberries have one of the highest antioxidant capacities of all fruits, vegetables, spices and seasonings. Antioxidants are essential to optimizing health and fighting disease, period.

Sprouted grains promote growth of good bacteria and are also high in protective antioxidants.

One serving of organic peanut butter has 15% of the recommended daily value for vitamin E, which has a reputation of fighting the cell-damaging free radicals in your body.

Cabbage is a nutritionally dense vegetable and especially useful for guys trying to build muscle. Cabbage is full of a chemical called indole-3-carbinol, which rids your blood of more feminine hormones, making one’s natural testosterone more effective.

Once stable at the airport, I found a spot to grab a black coffee, a tall glass of water and 4 over-medium eggs. My breakfast was square.

Ahhh, eggs! They are quite possibly my favorite food. Those four bad boys provided me with nearly 25 grams of protein to support my workouts. The yolk’s cholesterol is sort of the precursor for testosterone. For those of us constantly training for something, we want the muscle and strength building support.

So there you have it, my few minutes of preparation granted my wish of a healthy, happy airport meal.

This is great… I’m always on the lookout for muscle building foods, and never looked at cabbage.

Eggs! Just love em. I have also found out that the cholesterol in the yolk reduces the amount of ‘bad’ cholesterol your body produces making an egg even better.

Keep sharing, Gabe! One thing I’ve missed since being diagnosed with Celiac is sprouted grain breads. Do you know of a good alternative with similar benefits?

All about quick/healthy breakfasts… just takes a bit of planning. Here’s my favorite “egg muffin” recipe. Super easy to make, yet delicious and only takes 1:30 in the microwave to heat up!
